For the dough:
1 tsp sugar soup
1 tsp salt coffee
1 tsp saf-instant baker’s yeast soup
For the tomato brunoise:
3 cloves of garlic
½ lemon juice
Salt and pepper
In a bowl, put the flour, granulated sugar, salt and Saf-instant yeast, mix these ingredients dry before adding 260 ml of water, then mix again until a dough is obtained. .
Knead the dough for 1 minute, place it in a large bowl and cover with cling film and set aside to rise for about 1 hour.
Meanwhile, put your pot and its lid to preheat in the oven at a temperature of 200°C.
After 1 hour, when the dough is well risen, put it on a floured work surface and make flaps without letting the air escape from the dough. Cover the dough again with the bowl to let it rise for 15 minutes.
After 15 minutes, take the casserole out of the oven and carefully place the puffed dough inside. Bake it for 30 minutes at 200°C.
Remove the lid from the casserole 5 minutes before the end of cooking. After that, place your well-cooked dough on a tray to let it cool.
Brunoise of tomato
Cut the tomatoes into small cubes and place them in a large bowl.
Season the tomatoes with grated garlic, lemon zest, ½ lemon juice, olive oil, salt, pepper and finally the thyme.
Mix everything and keep the brunoise cool until the moment of presentation
Slice the bread into slices about 1 centimeter thick.
Before grilling, brush the slices with olive oil on both sides.
After grilling them, scrape the surface of each slice with garlic and place the brunoise of tomato on top. Add small pieces of mozzarella and a few basil leaves.
