Everybody aboard ! We’re going to sail straight for Italy this time.
Our new recipe is stuffed with mozzarella and served with delicious grilled chicken slices. Discover below the “Piadina”
For the dough:
4 cl of olive oil
10 g Saf-instant yeast
10 cl of milk
5 cl lukewarm water
1 teaspoon of salt
For garnish :
A few pickles
4 chicken or turkey cutlets
150g of mozzarella
8 basil leaves
Set and pepper
In the bowl of your robot, pour the flour and form a well.
Put the Saf-instant yeast, lukewarm water and milk in the centre.
Then add oil and salt.
Knead everything using the hook of your robot until you obtain a smooth dough. It takes 10 to 12 minutes of kneading.
Form a ball, place in a bowl and let it rest under a damp cloth for 2 hours.
Degas the dough then divide it into 4 equal parts.
Make balls with the 4 pieces of dough then spread each ball into a large thin disk.
Heat a non-stick pan and cook the circles of dough for 2 minutes on each side. The Piadinas will color slightly
Flatten the chicken cutlets and sear them on both sides with a little olive oil, salt, pepper and remove
Wash the tomatoes and lettuce
Cut the tomatoes into thin slices and cut the pickles very thinly, as well as the mozzarella into thin slices.
Take a piadina and garnish it on one side with lettuce, slices of mozzarella, tomatoes, strips of pickles and a cutlet.
Season with salt and pepper then add 2 basil leaves before folding the piadina in half.
Place the piadina garnished on a hot pan and leave on the heat for 2 minutes on each side until the cheese is melted.
